Skillet Brownies Ingredients Nonstick baking spray, for the skillet 1 1/2 cups sugar 1 cup all-purpose flour 1 cup chocolate chips 1/4 cup cocoa powder 1 teaspoon instant espresso powder 1 teaspoon salt 1/2 cup canola oil 1 teaspoon vanilla extract 3 large eggs Directions Lightly spray an 8-inch cast-iron skillet with a lid with baking spray. In a small bowl combine the sugar, flour, chocolate chips, cocoa powder, espresso powder and salt. In a separate small bowl mix together the oil, vanilla and eggs. Add the wet ingredients to the dry and stir together. Pour the batter into the skillet and spread in an even layer. Bake until the top of the brownie looks firm. Done when inserted toothpick turns up dry.
